Chocolate Truffles

I had such fun making these! Both me and my tiny kitchen were covered in cocoa and melted chocolate, but I’m not complaining -these were delicious!!  The ganache recipe is Fran Costigan’s – I used 70% dark chocolate, soy milk and vanilla.  I am dying to get some Kahlua and other liquours and start experimenting with those too!

These truffles were SO easy to make – when the ganache had become firm, I pulled off pieces and rolled them into balls in my hand.  Then the fun began – I played around with putting everything bar the kitchen sink into my truffles!!

Descriptions of some of the different combinations I made are below each photograph.

-Chocolate ganahce, ground cinnamon, melted chocolate, cocoa powder

-Chocolate ganache, cayenne pepper, melted chocolate, cocoa powder

-Chocolate ganache, almond extract, cocoa powder

    Thanks Megan Ellen and Vegan Noodle! I think my favourites from this lot were the cacao nibs and the coconut ones probably!

    OMG these look excellent … And such a variety too!

    Just wondering how you combine the lemon extract/almond butter … did you add to the ganache or dip later?

    Thanks somesaycocoa – I added the flavours after as I wanted to try so many different ones. Some combinations I loved, others not as much.
